This Charlotte-based pie bakery was created in the middle of the global pandemic to create locally sourced, quality food that brings a little bit of homemade comfort to you and yours.

 

We have chosen to create simple, quality food that touches that spot inside all of us, of deep comfort, that only food can bring. We have thought through every detail to make sure that what you get exceeds expectations.

We focus on chicken and plant based pot pies and desserts, made from scratch, by hand, using locally sourced ingredients.

Meet Our Founder

I’m Mary Jayne, owner and Executive Chef behind Thoughtful Baking Co.

I’m a North Carolina native from Richfield, who now lives in Charlotte. My earliest childhood memories are of visiting nearby strawberry farms in springtime, picking fresh blueberries and tomatoes in the Summer, and visits to the local Richfield pumpkin patch during Fall. I was inspired at a young age by food and the wealth of seasonal produce that North Carolina has to offer.

My first job cooking in the kitchen was at a small-town restaurant in Gold Hill, North Carolina which solidified my culinary passion for making food, and where I realized feeding the community was my calling. I attended Johnson and Wales Charlotte campus earning my AS in Baking and Pastry and a BA in Food Service Management. My love for food continued to grow as did my experience in various independently owned Charlotte restaurants and bakeries. In 2019, by winning runner up in the NCRLA Chef Showdown competition, I was named Chef Ambassador of the NC Department of Agriculture. This role is to support and raise awareness of North Carolina produce and farmers. I spent the last nine years as Director of Operations and Executive Chef at Amélie’s French Bakery before opening Thoughtful Baking Co.

I’m a self-motivated go-getter that is dedicated to doing all things in life with intention, creativity, and integrity. I have a deep passion for food, growing things, ie. plants, three young humans and businesses. I am inspired by the ever-changing offerings in seasonal produce, especially food coming from my home state of North Carolina. I believe in living with compassion, love a challenge, and never give up. I strive to bring all of this together to create food that is simple, delicious and highlights the quality of local ingredients. After close to two decades in the Charlotte culinary world, I realized that becoming my own boss and owning a business had to be the next step in my career. This is why Thoughtful Baking Co. was born.

Our menu is constantly evolving based on which harvest season we’re in and the produce we can source from local farms and food growers. We do offer a few staple menu items that are available all year round like our Pot Pies, Quiche and Shepherd’s Pies.

Made from scratch butter crust, using NC flour, filled with carrots, onions, celery, peas, potatoes and pasture-raised chicken, chicken stock, rosemary, thyme, salt and pepper. *All pot pies are sold for “Take and Bake” at home.

How and When do I order?

Right here on our site! Pre-Orders open on Monday 10am and close on Thursdays at 5pm.

Where are you located?

You can find us at Charlotte area farmers markets weekly and farm-to-fridge vending machines! Follow us on instagram for our market schedule and menu

You can also order our pies through Freshlist.com, which is an online food store that offers local meat, dairy, produce and other locally produced foods and offers pick up or home delivery in some of Charlotte’s zip codes.

Do you deliver?

Not yet! We do not have the capacity to do home delivery right now.

What are the pot pie baking instructions?

Individual Frozen Pies: Bake at 350* for 1hr 45 min or until crust is golden and filling is bubbly.

Family Size Frozen Pies: Bake at 375* for 1 hour 3o-45 min or until crust is golden brown and filling is bubbly.

What is in your pot pies?

Chicken

  • Crust - King Arthur and North Carolina flour, butter, Earth Balance buttery spread, salt, water.

  • Filling - pastured chicken, chicken stock, butter, flour, carrots, onions, celery, potatoes, peas, thyme, rosemary, salt and pepper.

Vegan Veggie

  • Crust - King Arthur and North Carolina flour, Earth Balance buttery spread, salt, water.

  • Filling - vegetable stock, King Arthur flour, Earth Balance buttery spread, carrots, onions, celery, shiitakes, potatoes, sweet potatoes, thyme, rosemary, salt and pepper.

We source locally whenever possible. We change our menu with the seasons which allows us the opportunity to support a number of local farms for different produce throughout the year. Our most featured farms are:

How many people will pot pies feed?

The family size feeds about 4 people.

Individual is a large serving for one, or could possibly be split by two. We recommend making a salad to go with it, if you are sharing.

Can I put them in the freezer?

Yes! We highly recommend getting a few and keeping them in the freezer. You can order them frozen , for stocking the freezer and fully baking in the comfort of your own home. If you ordered one for reheating and for some reason do not eat it within three days of receiving it, they can be frozen, as well, for up to two weeks.
